MANGO WITH GUACAMOLE AND CARROTS’ CHIPS

MANGO WITH GUACAMOLE AND CARROTS’ CHIPS

Ingredients:

- 4 ripe avocados (important that they are well riped).

- 2 tablespoons of fresh coriander finely chopped.

- Juice of 1 lemon.

- Salt and pepper to taste.

- 2 tablespoons of long onion.

- 1 cup of fresh mango in cubes.

For the chips

- 3 carrots.

- Oil for frying.

- Salt and pepper to taste.

MANGO WITH GUACAMOLE AND CARROTS’ CHIPS

preparation:

1. In a bowl, mash the avocados with a fork, then add the cilantro, lemon, salt, pepper and finish with the mango and the long onion. Mix.

2. Wash the carrots and without peeling them, split them into very thin slices, you can do this with the help of a slicer.

3. Put the slices inside two sheets of absorbent paper and dry them out until the water is extracted.

4. Fry for about 2 minutes in a large pot with a good amount of oil (which should be very hot). Reserve on absorbent paper.

5. Serve with guacamole.
