Today, I bring you a new blog post and you will like it big time, because when it comes to ideas that delight the most demanding dinner’s palads (our kids), we usually fall short, that’s why I bring 3 recipes that I love and use in my kitchen when cooking for my daughter Mandy, in which the potato is the main character.

It’s really common to cook french fries for our kids and of course they love them, but we all know that fried food is not precisely the healthiest, knowing that I decided to bring you options that you will love and will be cookin’- licious, however, you will need to keep the fries, at least once in a while.

The potato is rich in folic acid, potassium, magnesium, and fiber. It will support the digestive health of our kids, it also provides B6 and C vitamins. Let me tell you all that the recipes I bring you are made with 3 different kinds of potatoes: White potato, yellow potato, and sweet potato.

  • Yellow potato croquette

    Ingredients (5 croquettes)

  • 5 medium-size yellow potatoes.
  • 1 teaspoon of chopped spring onion.
  • ¼ cup of grated cheese (Parmesan cheese is allowed too).
  • 1 egg.
  • Sea salt to taste.
  • 1 teaspoon of olive oil.
  • Chopped parsley (Optional).

  • Preparation:

    Boil potatoes in water with sea salt. Once ready, smash them (Without peeling them), add the rest of the ingredients and we a spoon shape the croquettes taking them to a fry pan (You can put olive oil to avoid them from sticking). Turn them around until crispy.

  • Sweet potatoes pancakes

    This tuber is a potatoes’ cousin and it’s an antioxidant-rich food, as well as iron, zinc, potassium, vitamin C and E among others. It can be digested easily, it’s a source of proteins and super versatile in the kitchen.

     Ingredients for 8 medium-size portions:

  • 150 gr of mashed potato (previously baked).
  • 3 spoons of flaked oats.
  • 1 tablespoon of powdered cinnamon.
  • ¼ milk.
  • 1 egg + 1 egg-white.
  • 1 spoon of milled flax.

  • You can add artificial sweetener if you want to, I didn’t use any. Preparation: Blend all ingredients, set the mixture on a fry pan and put some olive/coconut oil. Turn the pancake until firm. Finally, you can add some honey.

  • White potato baskets

  • 2 medium-size potatoes graded.
  • 1 spoon of olive oil.
  • Sea salt.

  • Preparation:

    Peel the potatoes and grade them without previous boil. Mix the rest of the ingredients and put this mixture into a cupcake mold pushing it against the every mold to create the necessary space to pour the mixture. Take the molds to a preheated oven at 356 F for 15min. Take them out and cool down. Dismount and serve with veggies.

    I hope you can set these recipes in motion at home, besides they are super functional and easy because they are useful for breakfasts, dinners or lunch meals. You can be confident that you are giving your kids a delicious and most of all healthy food .
